Butternut Squash Soup Instant Pot Recipe

Servings 4-5 


Ingredients (organic)

  • 4 cups fresh chopped butternut squash (large cubes) or half of a medium butternut squash
  • 2 tomatoes (chopped into 4 pieces)
  • 2 green onion (chopped into half)
  • 200 ml coconut milk
  • 200 ml water
  • Salt to taste
  • 1/2 tsp cumin powder
  • 1/2 tsp fennel seeds
  • olive oil to drizzle at end

Cooking Instructions:

  • Add all ingredients together into the instant pot and set pot on 5 Minute High Pressure Cook setting
  • Open once complete, blend to become smooth (in Vitamix or other) and serve!
