Hing, otherwise known as asafoetida, is a multipurpose plant resin, used both in cooking and as an herbal remedy. In the kitchen, hing imparts a nice zingy flavour, similar to that of an onion. Use hing in cooking to spark appetite and digestion. In Ayurveda, hing is traditionally used for a plethora of digestive complaints such as sluggish digestion, bloating, intestinal gas and cramping, and intestinal worms. Hing’s very pungent nature, lends itself to the clearing of obstructions in the GI tract. Conditions like constipation or build ups due to overeating and intake of processed foods could be a call for hing. Used for vata and kapha digestive complaints, hing is hot! And will increase pitta dosha.
How to use it in cooking: heat a pan with oil or ghee, add hing along with other spices in preparation to cook a dish such as vegetables, lentils or soup. When hing and other spices are fragrant add the next ingredients. Hing is especially useful when cooking beans or lentils, significantly helping to reduce gas.
